OUR STORY
Where it all began.
It all started with a trip to Italy in the early 1990s. Peter Quattroville came home with a vision: to grow premium olives on Australian soil, in a region with the perfect climate and character to do it justice.
In 1997, the family purchased 100 acres of virgin land in Pokolbin, in the heart of the Hunter Valley. They planted from scratch. Peter became a founding board member of the Hunter Olive Association and was among the very first growers to establish an olive grove in the region, a pioneer in what has since become one of Australia's most respected olive-growing areas.
Today, those trees are mature, productive, and tended with the same hands-on care they've always received.
OUR VARIETY
One exceptional olive oil.
Our grove is planted primarily with Frantoio, the Italian variety prized for its rich, fruity oil and the backbone of many of Tuscany's finest blends. The Lower Hunter Valley's warm days, cool nights, and rich soils create ideal growing conditions for this variety and the result speaks for itself.

OUR PROCESS
From tree to bottle in hours.
Harvested by machine using smaller, gentle units designed to protect the integrity of each olive, our fruit goes from tree to press in hours. Speed matters. The less time between picking and pressing, the more flavour and nutrition make it into the bottle.
Our olives are cold-pressed to produce an unfiltered extra virgin olive oil that retains its natural cloudiness, depth, and character.
Pressing takes place each year in May, when the fruit is at its peak.
OUR TASTE
So what does it taste like?
We harvest at the precise moment when our trees carry the perfect balance of black and green olives, this is the sweet spot that defines our oil's character.
The result is a grassy, full-flavoured oil with the hallmark of great Italian extra virgin: a clean, confident pepperiness that builds at the back of the palate. It's versatile enough for everyday use and exceptional enough to finish a dish. Drizzle it over burrata, dip fresh bread into it, or use it as the base of any dressing.
